Any of the four work well as lattes, but Nagomi is a great starting point — its umami, floral, and sweet notes come through beautifully with milk. If you want something creamier and sweeter, Hayashi gives you that “ice cream”-like latte experience. For a richer, bolder cup, Sen is the one.

While Nagomi and Hayashi are subscribed by cafes, Umi and Sen are the most popular among our popup partners. Both are full-bodied and hold up well against milk, syrups, and dessert recipes. Umi goes toe-to-toe with everyone and is cost-effective to do business with, while Sen has a distinct rich umami depth that makes it a strong signature latte base.

Hayashi. It has the highest sweetness rating among the matcha lineup, with a creamy, nutty, vanilla-forward aroma and a latte taste that’s been described as “ice cream”-like.

Sen. It has the highest umami rating in the lineup, with a rich, earthy, creamy latte profile and a pleasant lingering depth.

Nuttiness shows up across all four of our matcha, which is one of the things that makes them easy to enjoy. If you want it most pronounced, Hayashi leads with a sweet, nutty, vanilla-forward aroma that carries all the way through to the cup. Nagomi follows with a clean, earthy nuttiness. Umi brings a buttery, nutty quality, and Sen rounds it out with a deeper, richer nuttiness alongside its bold umami character.

Kitsune is the sweeter, more approachable of the two. It has a caramel and toasted rice puff aroma, and as a latte it comes across as toasty, umami, and creamy. If someone is new to hojicha or prefers something a little lighter and more comforting, Kitsune is usually the one they reach for.

Kuro goes deeper. The roast is more intense, with aromas of dark cocoa, roasted chestnuts, and caramel. As a latte it tastes like dark chocolate, coffee, and umami all at once. It’s the one for people who want something bolder and more indulgent as their signature drink.
